Monterey Chicken Roll


1 boneless chicken breast
1/2 oz jalapeno jack cheese
1 tbsp flour
1 beaten egg
2 tbsp Italian bread crumbs
2 tbsp white wine
1 tbsp softened butter
1 tsp dried parsley
1/8 tsp oregano, dried and crushed


Preheat the oven to 350 degrees F.
Pound the chicken to 1/8" thick, then sprinkle with salt & pepper.
Place a piece of cheese (1"x1/2"1/2") on the chicken, then fold in the sides and roll up. Skewer to hold it closed.
Roll in flour, egg, and then crumbs to coat.
Bake in a shallow dish for 30 minutes.
Meanwhile, for the sauce, in a microwave dish combine the white wine, butter, parsley, and oregano.
Cook only until the butter has melted.
After the chicken has cooked for 20 minutes, pour the sauce over the chicken and continue to cook.
